Grandmother's Chicken Soup With Passover Noodles
1 3- to 4-pound kosher chicken, cut into 8 pieces
1 leek, washed and ends trimmed
2 celery stalks, washed
4 large carrots, peeled
1 green bell pepper, halved and seeded
1 parsnip, peeled
1 bunch fresh dill, washed
1 or 2 chicken bouillon cubes
Passover Noodles
Put the chicken in a large stockpot, and add enough water to cover
by about 2 inches. Bring to a boil and continue boiling for 5 to 8
minutes. Skim off and discard any solids that rise to the top.
Add the vegetables, dill and bouillon cubes. Reduce the heat to
medium and let the soup cook, uncovered, 1-1/2 hours.
Remove the chicken and vegetables; discard or save for another
use. Strain the soup, let it cool, and refrigerate it, covered.
Skim fat that congeals on the top.
Just before serving, reheat the soup. Place a handful of Passover
Noodles in each soup bowl, and cover with hot soup. Makes 8 to 10
servings.
