  Potato Kugel

I prefer cooking this the same day it is to be eaten. If you want to double the recipe, I would suggest 2 baking dishes.
6 tablespoons vegetable oil
5 large baking potatoes (about 5 pounds total)
1 medium onion, peeled and cut into quarters
3 extra-large eggs
½ cup matzo meal
2 teaspoons kosher salt
1 teaspoon freshly ground pepper

Preheat oven to 375 degrees. Generously oil a 9-by-13-inch glass baking dish. Place baking dish in the hot oven. (Heating the oil prevents potatoes from sticking and ensures a golden crust.) Peel potatoes; cut into quarters. Working in batches, finely chop in the food processor. Add the onion to the last batch, along with the eggs and matzo meal. Mix all together in a bowl with the salt and pepper.

Remove baking dish from oven and add potato mixture, evening the top. Bake for 1 hour, until golden brown. Let cool and cut into squares. Serve with Mushroom-Rosemary Sauce. Makes 10 to 12 servings.

Per serving: 344 calories, 7 grams protein, 57 grams carbohydrate, 10 grams fat (1 grams saturated), 26 percent calories as fat, 6.2 grams fiber, 64 milligrams cholesterol, 458 milligrams sodium.
