  Stuffed Eggs with Mayonnaise Vinaigrette

1 tablespoon minced onion
Vegetable oil
6 extra-large eggs, hard-cooked, cooled and peeled
½teaspoon Dijon mustard
4 tablespoons mayonnaise
Kosher salt and freshly ground pepper
Mayonnaise vinaigrette (see note*)

Saute onion in a lightly oiled pan until golden brown. Set aside. Cut eggs in half lengthwise. Transfer yolks to a bowl; set aside the whites. With a fork, mash the yolks. Mix in mustard, fried onion, mayonnaise and salt and pepper to taste. With a spoon or pastry bag, fill whites with yolk mixture. Cover and chill. Serve with vinaigrette. Make 12 servings.

*Note: To make vinaigrette, stir together 1/2 cup mayonnaise, 1 tablespoon water, 1 teaspoon apple cider vinegar, 1/4 teaspoon sugar and 2 tablespoons minced dill (optional).

Per serving: 137 calories, 3 grams protein, 1 grams carbohydrate, 14 grams fat (2 grams saturated), 88 percent calories as fat, trace fiber, 115 milligrams cholesterol, 115 milligrams sodium.
